You could add a field to the bottom of the Find in Files dialog and display the currently searched file there. The problem with that is that the dialog box can be closed while the search is running, to make it easier to get on with other things. In that case - I'd say - the user is not interested ...

Do your search first, then right click the results and choose "Open All", and then do your search and replace with Scope set to "All documents". This has worked well for me for year. Only have had problems if there have been hundreds of files to change as they all need to be open at the same time ...
