How do I get Textpad to highlight syntax as I am keying it into the editor??
It highlights once I save it, but I want it to highlight as I am keying.

If you have just a single document class, add *. to the list of file patterns of this document class.
If you use more than one document class: no way!
As textpad uses the filename to decide which document class a file belongs to, there is no way except saving after typing the first (or first few) character(s).
