When I search for text, the found text is highlighted with a color that I can barely see - is there anyway I can change this color so I can see it???

Two options.
A) a temporary solution. Right click in any given document and select Properties. The rightmost tab, Colors. Scroll down toward the bottom. Choose a new colour for Selected Text
B) a permanent solution. Configure -> Preferences (Ctrl-Q-P) Document Classes (find the class you're working with or edit the Default) Expand the tree menu and again it'll be under Colors

Bad "selected text(no focus)" color in default doc
I had this issue too on a large TFT monitor. It's more of a problem on TFT monitors and laptops as the displays are not as bright as CRTs. However, more and more people are using TFT screens, so many people will be experiencing this issue.
The problem is that during searching, the search box is the active window (on XP anyway), so any text in the main window is highlit using the "selected text(no focus)" color. This is black text on a very light grey background by default, which is very difficult to spot on a large window full of text with default colors (black text on a white background).
If you click back on the main window, the highlight becomes blue background with white text, which is easy to see, but obviously you don't want to do this all the time when searching multiple times through a big file.
I suggest the defaults are adjusted for new releases.
