Is there a way to change the default fault for all files. I have found how to change the font for one document but then it reverts back to the original default for any new document?

Select "Configure->Preferences" on the menu and then "Document Classes". The you can set the default font for each of the document classes including the one with the name "Default". Then the font should be the same for all the document types by default....also for new files.
